Summer Zucchini with Spring Onions
2 zucchini sliced in half moons
5 spring onions, ends chopped off, bub quartered
2 cloves garlic, crushed
1 tsp. lemon zest
salt and pepper to taste
heat 1 tbsp. olive oil in skillet over med-high heat. add spring onions, cook 2 minutes. Add zucchini and garlic cook for 5 minutes. lower heat to medium and saute another 2 minutes. stir in chopped garlic and lemon zest. season with salt and pepper.
