Peach Muffins

logo The Cold Cereal & Toast blogger had picked up a can of our peaches in her Greensgrow Winter CSA share.  You could use Three Springs Apple Sauce as well, as well as substitue fresh peaches in season.  Her recipe as written can be found here

 

Ingredients:

  • 1 cup whole-grain flour
  • 1 cup almond flour
  • 1 teaspoon salt
  • 1/3 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 3/4 cup 2% milk + 1/4 cup water
  • 1/3 cup jam butter (equal parts jam & soft butter) - substitute apple sauce
  • 1 cup diced peaches (perhaps a few more peaches, according to some) - substitute fresh in season

Directions

  1. Preheat oven to 425 degrees F
  2. Fill a muffin tin with 12 paper cups
  3. mix the first five dry ingredients in a large bowl
  4. slightly beat the eggs, mix in applesauce (jam butter) and milk
  5. add wet ingredients to dry mix.  stir until just combined, add diced peaches
  6. spoon into muffin cups
  7. bake for 15 to 18 minutes or until tops are golden brown

Notes

  • recipe yielded 16 muffins, so it might be good to be ready with a second pan
  • the recipe called for skim milk, thus the solution above
  • 15 mins made the perfect moist, tender muffins - the peach flavor was a bit mild, so it could benefit from another 1/2 cup of peaches
